Cherry Cobbler is great in the summertime with ice cream. I have been making this recipe for years.

Ingredients:

  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 stick (1/2 cup) margarine or butter
  • 1 cup milk or 1 cup of the juice from the can of peaches.
  • 2- 15 once cans of cherries (drained) or about 4 cups of frozen cherries.
  • ice cream (optional) as a topping for eating

Directions:

  1. Melt margarine in 9 x 13-inch baking pan.
  2. Then mix sugar, flour and milk together well.
  3. Pour cherries into the pan.
  4. Pour the batter over the cherries.
  5. Bake at 350 degrees until lightly browned and a toothpick comes out clean.

Country Six-Bean Soup Mix

Ingredients:

  • 1/2 cup dried red beans
  • 1/2 cup dried navy beans
  • 1/2 cup dried pinto beans
  • 1/2 cup dried baby lima beans
  • 1/2 cup dried kidney beans
  • 1/2 cup dried Great Northern beans
  • 2 bay leaves
  • 2 tablespoons dried minced onion
  • 1 tablespoon dried parsley flakes
  • 2 teaspoons beef bouillon granules
  • 1 teaspoon dried minced garlic
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 4 to 5 cups water
  • 1 can (28 ounces) diced tomatoes with Italian seasonings
  • 8 ounces smoked sausage links, sliced
  • Salt to taste
  • black pepper to taste
  • Hot pepper sauce or red wine vinegar (optional)

Directions:

  1. Place beans in large bowl; cover with water. Soak 6 to 8 hours or overnight. (To quick soak beans, place beans in large saucepan; cover with water. Bring to a boil over high heat. Boil 2 minutes. Remove from heat; let soak, covered, 1 hour.) Drain beans; discard water.
  2. Combine soaked beans, water, tomatoes, sausage, and all seasonings in Dutch oven. Bring to
    a boil over high heat.
  3. Cover; reduce heat and simmer 1½ to 2 hours or until beans are tender.
  4. Season to taste with salt, pepper, and hot pepper sauce, if desired.


Makes 8 to 10 servings
Note: For thicker consistency, mash beans slightly with potato masher.

This is a quick method for preparing stuffing. Croutons are available in various flavors, so select the one that best suits your preference to create the stuffing

Ingredients:

  • 1/4 cup margarine or butter
  • 1/4 cup chopped celery
  • 1/4 cup chopped onion
  • 1 2/3 cups water
  • 1 package croutons (6 ounces)

Directions:

  1. Melt 1/4 cup margarine or butter over low heat.
  2. Add celery and onion and cook until soft.
  3. Carefully add water.
  4. Add croutons and stir until croutons are moistened.
  5. Fluff with a fork.

Homemade Meatballs: A Family Favorite

Meat balls can be great. You can put them in a sauce and just eat them, or you can put them in spaghetti. My daughter, who is very picky about eating meat, likes these in spaghetti.

Ingredients:

  • 1 egg
  • 3/4 soft breadcrumbs (1 slice of bread)
  • 1/4 cup finely chopped onion
  • 2 Tablespoons finely chopped green sweet pepper
  • 1/4 teaspoon dried oregano, crushed
  • 1/4 teaspoon salt
  • 12 ounces ground beef

Directions:

  1. In a large bowl combine the egg, breadcrumbs, onion, green sweet pepper, dried oregano, crushed, and salt.
  2. Add ground beef and mix well.
  3. Shape into 24 meatballs.
  4. Arrange meatballs in a 15×10×1-inch baking pan.
  5. Bake in a 350°F oven for 15 to 20 minutes or until done (160°F).
  6. Drain.
  7. Use as desired.

Easy Meat Loaf Recipe for Beginners

Simply Delicious Meat Loaf

  • Prep time: 5 minutes
  • cook time: 1 hour 5 minutes
  • makes 6 servings

Ingredients:

  • 1 ½ lbs ground beef
  • 1 can (10% oz.) Campbell’s Golden Mushroom soup
  • ½ cup Italian- seasoned dry bread crumbs
  • 1 egg, beaten
    ¼ cup water

Directions:

  1. Mix beef, bread, crumbs, and egg thoroughly.
  2. Then, in a medium baking pan, shape firmly into 8*4-inch loaf.
  3. Bake at 350 degrees for 30 minutes.
  4. Spread ½ can soup over top of meat loaf. Bake 30 minutes more or until meat loaf is no longer pink.
  5. Pour 2 tbsp of liquid (drippings out of the meat loaf into a small saucepan. Add remaining soup and water.
  6. Heat through. Serve with meat loaf.

Easy Home-Style Beef Stew Recipe

Home-style Beef Stew

  • makes 4 servings

Ingredients:

  • 3 tbsp all purpose
  • ½ tsp dried thyme leaves, crushed
  • 1/8 tsp pepper
  • 1 bay leaf
  • 1 pound beef for stew meat, cut into 1-inch cubes
  • 1 tbsp vegetable oil
  • 1 can (10½ oz) Campbell’s beef broth
  • ½ cup water
  • 3 medium carrots (about ½ lb), cut into 1-inch pieces
  • 2 medium potatoes (about ½ lb), cut into quarters

Directions:

  1. Mix flour and pepper.
  2. Coat beef with flour mixture.
  3. In a large heavy pot over medium-high heat, heat oil.
  4. Add beef and cook until browned, stirring often. Set beef aside. Pour off fat.
  5. Add broth, water, thyme, and bay leaf. Then, heat to a boil. Return beef to pan. Reduce heat to low.
  6. Cover and cook 1 ½ hours.
  7. Add carrots and potatoes, Cover and cook 30 minutes or until beef, carrots, and potatoes are fork tender, stirring occasionally. Discard bay leaf.

Easy Basic Biscuit Recipe for All Occasions

Basic Biscuits
This is a basic biscuit recipe. To this recipe you can add cinnamon and raisins for cinnamon raisin biscuits. Add some garlic and shape the dough into bread sticks and then paint them with melted butter mixed with a little garlic and you will have garlic bread. Use cookie cutters to shape the dough and the possibilities are endless.

Ingredients:

  • 2 cups Self-Rising Flour
  • 1/4 cup shortening
  • About 3/4 cup milk (if there is a lot of humidity in the air or it is raining, start with 1/2 cup milk.)

Directions:

  1. Heat oven to 450°F.
  2. In large bowl, cut shortening into flour until mixture resembles coarse crumbs.
  3. With a fork, stir in enough milk to form a soft dough or until dough pulls away from sides of bowl.
  4. Turn dough onto lightly floured board or pastry cloth; knead just until smooth. Roll
    dough to 12-inch thickness; cut with floured 2-inch round cutter.
  5. Place biscuits on ungreased baking sheet.
  6. Bake at 450°F for 10 to 12 minutes or until golden brown.
  7. Makes 12 to 14 biscuits.

Variation: For Old Fashioned Buttermilk Biscuits follow recipe for Basic Biscuits except substitute 3/4 cup plus 2 tablespoons buttermilk for milk and sift 1/4 teaspoon baking soda with flour.

Easy Homemade Quesadillas with Cheese



Ingredients:
  • 2 cups Masa harina
  • 1 3/4 cups warm water
  • 1lb of your favorite queso
  • oil for frying
Directions:
  1. Kneed together the Masa and water until a soft dough forms. See picture of dough  below.
  2. Form the dough into 12 equal balls.
  3. Using a tortilla press, flatten the balls.
  4. Place a piece of cheese into the center of the flattened dough. See picture below.
  5. Fold the dough around the cheese.
  6. Heat about 1 inch of oil in a deep-frying pan.
  7. Fry the quesadilla on both sides until it is a golden-brown color.
  8. Drain on paper towels.
