STRAWBERRY MERINGUES

Ingredients:

  • 1 16oz package frozen strawberries
  • 1¼ teaspoon salt
  • 1½ teaspoon cream of tartar
  • 1 cup sugar
  • ½ pint heavy whipping cream
  • cooking oil for greasing the pan

Directions:

  1. Heat the oven to 250°,
  2. Take strawberries from the freezer and thaw.
  3. Break each egg open and separate the white part from the yellow yolk.
  4. Put all the egg whites in a mixing bowl.
  5. When egg whites reach room temperature, add salt and cream of tartar.
  6. Beat this mixture until almost stiff. Slowly stir in 3/4 cup of sugar.
  7. Beat until all is dissolved.
  8. Line a greased baking pan with heavy brown paper upon which you have outlined 4-6 hearts. Or if you have it, use 1 heart shaped pan that has been well greased with cooking oil.
  9. Spoon some batter onto each heart and mold it into the shape of the heart.
  10. Leave the sides higher than the center so that you have heart-shaped shells.
  11. Bake for 1 hour. Let stand in a turned off oven (door closed) at least 10 minutes.
  12. Chop the thawed strawberries into tiny slices and set aside.
  13. Pour the cream into a mixing bowl.
  14. Beat, slowly adding 1/4 cup sugar.
  15. Continue beating until the cream is stiff enough to stand in peaks.
  16. Take the shells from the oven.
  17. When cool, fill the center of each with chopped strawberries.
  18. Cover with whipped cream.
