Black bean Burgers are great. They can be served with any of the following: lettuce, tomato, guacamole, salsa, Jack cheese, lime wedges, plain yogurt, or sour cream.

Ingredients:

  • Two 16-ounce cans black beans, drained and rinsed
  • 1/2 cup panko breadcrumbs
  • 2 large eggs, lightly beaten
  • 2 scallions, minced
  • 1 small red onion, peeled and chopped
  • 1/2 cup spinach, chopped
  • 1/2 cup grated carrots
  • 3 tablespoons chopped cilantro
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • oil for frying


Directions:

  1. Place 2 cups of the black beans in the bowl of a food processor, and pulse until chunky.
  2. Transfer the processed beans to a large mixing bowl, and add the whole black beans, breadcrumbs, eggs, scallions, red onion, spinach, carrots, cilantro, garlic, cumin, and oregano, and mix until well combined.
  3. Divide the mixture into patties, about an inch thick. Sprinkle them with the salt and pepper.
  4. Heat a 12-inch skillet over medium-high heat with the oil.
  5. Cook the burgers until they’re well browned on both sides and heated throughout, 8 to 10 minutes.
  6. Serve.
