Black bean Burgers are great. They can be served with any of the following: lettuce, tomato, guacamole, salsa, Jack cheese, lime wedges, plain yogurt, or sour cream.
Ingredients:
- Two 16-ounce cans black beans, drained and rinsed
- 1/2 cup panko breadcrumbs
- 2 large eggs, lightly beaten
- 2 scallions, minced
- 1 small red onion, peeled and chopped
- 1/2 cup spinach, chopped
- 1/2 cup grated carrots
- 3 tablespoons chopped cilantro
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- oil for frying
Directions:
- Place 2 cups of the black beans in the bowl of a food processor, and pulse until chunky.
- Transfer the processed beans to a large mixing bowl, and add the whole black beans, breadcrumbs, eggs, scallions, red onion, spinach, carrots, cilantro, garlic, cumin, and oregano, and mix until well combined.
- Divide the mixture into patties, about an inch thick. Sprinkle them with the salt and pepper.
- Heat a 12-inch skillet over medium-high heat with the oil.
- Cook the burgers until they’re well browned on both sides and heated throughout, 8 to 10 minutes.
- Serve.
