A Sweet & Savory Apricot‑Glazed Chicken

With just a handful of pantry spices and a spoonful of apricot preserves, ordinary chicken breasts transform into something tender, fragrant, and beautifully glazed. It’s the kind of recipe you can pull together on a busy evening—quick to prep, easy to bake, and reliably delicious.

Cook time: 35 minutes

Ingredients:

  • 4 Boneless, skinless chicken breasts
  • 2 tsp Garlic powder
  • 2 tsp Paprika
  • salt to taste
  • ground black pepper to taste
  • 4 tablespoons Apricot preserves
  • cooking oil

Directions:

  1. Lightly oil a baking dish just large enough to hold the chicken in a single layer.
  2. Season the chicken with garlic powder, paprika, salt, and black pepper.
  3. Put a tablespoon of apricot preserves on each piece, and spread all over the
    chicken.
  4. At this point, you can either bake the chicken or cover and marinate it in the refrigerator for several hours or overnight.
  5. When ready to bake, Preheat the oven to 350°F.
  6. Bake the chicken in the preheated oven until is cooked through, the juices run clear, and a meat thermometer inserted in the thickest part of the chicken reads at least 165°F, about 25 to 35 minutes, depending on size.
  7. About 10 minutes before they’re done cooking, (or if the chicken starts to look dry), top the chicken pieces with additional preserves.
    STORAGE: Leftover chicken will keep well wrapped in the refrigerator for 2 to 3 days.
