Down-Home Baked Macaroni and Cheese

Prep Time: 25 min. Total Time: 45 min./Makes: 5 servings, 1 cup each.

What You Need

  • 1/4 cup butter, divided
  • 1/4 cup flour
  • 1 cup milk
  • 1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes
  • 2 cups elbow macaroni, cooked
  • 1/2 cup shredded cheddar cheese
  • 6 round buttery crackers, crushed (about 1/4 cup)

Directions:

  1. Heat oven to 350°F.
  2. Melt 3 tbsp. Butter in medium saucepan on medium heat whisk in flour; cook 2 min. 
  3. Stirring constantly. Gradually stir in milk. 
  4. Bring to boil; cook and stir 3 to 5 min or until thickened.
  5. Add cheese; cook 3 minutes or until melted stirring frequently.
  6. Stir in macaroni.
  7. Spray 2 gt casserole dish with cooking spray.
  8. SPOON into the casserole.
  9. Sprinkle with cheddar.
  10. Melt remaining butter.
  11. Add the cracker crumbs to the melted butter and stir until coated.
  12. Sprinkle over casserole.
  13. BAKE 20 min. Or until heated, though.
