Chicken & Garlic Risotto
Prep/cook time: 20 minutes
Ingredients:
- l can Campbell’s Cream of Mushroom soup
- 4 skinless, boneless chicken breasts halves (about 1 lb.).
- 1 tbsp. butter or margarine
- 1 tsp minced garlic
- 2 cups water
- 2 cup uncooked rice
- Campbell’s cream of Chicken Soup
- 1 cup frozen peas and carrots
Directions:
- Season the chicken.
- Heat butter in skillet. Add chicken and cook 10 minutes or until browned. Remove chicken.
- Add garlic and let cook about 1-2 minutes.
- Add soups, water, and heat to a boil. Stir in rice and vegetables. Top with chicken. Cover and cook over low heat 25-30 minutes or until done. Remove from heat.
- Let stand 5 minutes.
Makes 4 servings
