Easy Chicken Quesadilla Recipe

Chicken Quesadillas

Ingredients:

  • 1 small pack of chicken breast fillets
  • 1 Large onion
  • 1 Pack pepper jack cheese
  • 1 Large bell pepper
  • 1 Pack tortillas
  • Olive oil or your choose of cooking oil
  • Salt and pepper to taste
  • Salsa (optional)

Directions:
1. Cut chicken into pieces.
2. Add Salt and pepper to the chicken.
3. Slice the bell pepper and onion into the size you prefer.
4. Cover the bottom of a large skillet with olive oil put over medium-high heat.
5. Once the oil is warm toss in meat, peppers and onion.
6. Cook until done, stirring often.
7. Grate pepper jack cheese.
8. Take one tortilla and fill one side with meat mixture and top with grated cheese.
10.Fold over the other side of the tortilla.
11.Brown the Quesadilla in a large non-stick skillet or griddle.
12. Serve with Salsa.

Easy Chicken Enchiladas Recipe

Easy Chicken Enchiladas

Ingredients:

  • 4 boneless chicken breasts cubed
  • 8 oz. sour cream
  • ½ pack taco seasoning
  • 2½ cups cheddar cheese
  • 1 can tomatoes
  • 1 pack small tortillas

Directions:

  1. Sauté chicken in taco seasoning.
  2. In a large bowl, combine sour cream, tomatoes, 1 ½ cups cheese.
  3. Spoon chicken and mixture onto tortillas
  4. Roll up and place in baking dish.
  5. Pour remainder of soup mixture over enchiladas.
  6. Top with remaining cheese
  7. Bake at 350 for 20 minutes.

Chicken fajitas are one of my all-time favorite 30-minute meals to make for my family. Seared chicken with tender-crisp peppers and onions.

Easy Chicken & Broccoli Alfredo Recipe

Chicken & broccoli Alfredo

Prep/ cook time: 20 minutes

Ingredients:

  • Cream of mushroom soup (10 oz)
  • 1 pack of linguine (8 oz)
  • 1/2 Cup milk
  • 1 cup fresh or frozen broccoli
  • 1/2 cup grated Parmesan cheese
  • 4 tsp ground black pepper
  • 2 tbsp butter or margarine
  • 1-pound skinless, boneless chicken breasts, cubed

Directions:

  1. Prepare linguine according to package directions. Add broccoli for last 4 minutes of cooking time.
  2. Drain and set aside.
  3. In medium skillet over medium-high heat, heat butter. Add chicken and cook until browned, stirring often.
  4. Add soup, milk, cheese, pepper, and linguine mixture and cook through, stirring occasionally. Serve with additional Parmesan cheese.

Makes 4 servings

Easy Chicken & Garlic Risotto Recipe

Chicken & Garlic Risotto
Prep/cook time: 20 minutes

Ingredients:

  • l can Campbell’s Cream of Mushroom soup
  • 4 skinless, boneless chicken breasts halves (about 1 lb.).
  • 1 tbsp. butter or margarine
  • 1 tsp minced garlic
  • 2 cups water
  • 2 cup uncooked rice
  • Campbell’s cream of Chicken Soup
  • 1 cup frozen peas and carrots

Directions:

  1. Season the chicken.
  2. Heat butter in skillet. Add chicken and cook 10 minutes or until browned. Remove chicken.
  3. Add garlic and let cook about 1-2 minutes.
  4. Add soups, water, and heat to a boil. Stir in rice and vegetables. Top with chicken. Cover and cook over low heat 25-30 minutes or until done. Remove from heat.
  5. Let stand 5 minutes.

    Makes 4 servings
