Essential Cooking Ingredient Replacements

Emergency Substitutions for common ingredients listed in a recipe.

If you don’t have:Substitute:
Baking powder, 1 teaspoon1/2 teaspoon cream of tartar plus 1/4 teaspoon baking soda
Balsamic vinegar 1 tablespoon1 tablespoon cider vinegar or red wine vinegar plus 1/2 teaspoon sugar
BrandyWhiskey, Rum, Wine, Vodka,  Gin, Bourbon, Brandy Extract, Apple Juice, White Grape Juice
Notes: Substitute for brandy in cake and fruitcake: Brandy is often used in desserts, but you can easily substitute it. For most cakes, 2 to 3 tablespoons of brandy extract will provide a similar flavor to real brandy. Alternatively, you can use the same amount of bourbon or rum, or simply add some apple juice. A good fruitcake usually includes brandy, but if you’re out, grape juice makes a great alternative. Orange or apple juice also works well, especially in light and colorful fruitcakes. For an alcohol-free option, try soaking dried fruits overnight in a glass bowl to release their natural juices, adding extra flavor to your cake.
Bread crumbs, fine dry, ¼ cup3/4 cup soft breadcrumbs, or 1/4 cup cracker crumbs, or 1/4 cup cornflake crumbs

Substitutions for Seasonings.

If you don’t have Substitute:
Apple pie spice, 1 teaspoon1/2 teaspoon ground cinnamon plus 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground allspice, and dash ground cloves or ginger
Cajun seasoning, 1 tablespoon1/2 teaspoon white pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon
onion powder, 1/2 teaspoon ground red pepper, ½ teaspoon paprika,
and ½ teaspoon black pepper
Herbs, snipped fresh, 1 tablespoon1/2 to 1 teaspoon dried herb, crushed, or 1 teaspoon ground herb
Poultry seasoning, 1 teaspoon3/4 teaspoon dried sage, crushed, plus ¼ teaspoon dried thyme or
marjoram, crushed
Pumpkin pie spice, 1 teaspoon1/2 teaspoon ground cinnamon plus 1/4 teaspoon ground ginger,
1/4 teaspoon ground allspice, and 1/2 teaspoon ground nutmeg

Cowboy Cookies

These are a family favorite. I remember making a big batch of these before every trip to see my dad. He loved these cookies.

Ingredients:

  • 2 cups old-fashioned rolled oats
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 3/4 cup (1½ sticks) unsalted butter, softened
  • 1/4 cup vegetable shortening
  • 1 cup packed light-brown sugar
  • 2/3 cup sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups semisweet chocolate chips
  • 1 cup chopped walnuts
  • 1 cup Raisins

Directions:

  1. Combine the oats, flour, baking powder, baking soda, salt, and cinnamon in a large bowl.
  2. Mix well.
  3. In a separate bowl, beat the butter, shortening, and sugars with an electric mixer for 2 minutes. Beat in the eggs, one at a time.
  4. Blend in the vanilla.
  5. Using a wooden spoon, stir in the dry mixture, about half at a time.
  6. Add the chocolate chips and walnuts. Stir until evenly mixed.
  7. Preheat the oven to 350°F. Lightly butter two large, shiny baking sheets or line them with parchment paper.
  8. Using an small ice cream scoop or a spoon place dough in balls onto baking sheets leaving about 2½ inches in between.
  9. Bake one sheet at a time on the center oven rack for 13 to 14 minutes, turning the baking
    sheet 180 degrees midway through the baking time.
  10. When done, the cookies will have browned very lightly and still look moist beneath the
    surface. Do not over bake.
  11. Cool for 2 to 3 minutes on the baking sheet.
  12. Transfer to a rack to cool completely. If you’re using only one baking
    sheet, let it cool between batches. Makes about 24 cookies.

VARIATIONS

  • Coconut Cowboy Cookies
    • Add 1 cup of flaked sweetened coconut to the dough along with the chocolate chips.
  • Bandanna Cowboy Cookies
    • Omit the chocolate chips and substitute 1 cup of white chocolate chips and 1 cup of Craisins. (The white and red suggest a bandanna.)
  • Peanut Butter Cowboy Cookies
    • Omit the chocolate chips and substitute 2 cups of peanut butter chips. Or use 1 cup each of peanut butter chips and chocolate chips.

Easy 3-Ingredient Peanut Butter Cookies

When I was a little girl, we didn’t have much money. We certainly didn’t have money for extras like cookies, but children like cookies. I was no exception. Thankfully, we go WIC. WIC, for those that may not know, stands for Women, Infants, and Children. WIC gives food to poor women who have infants and young children. One of the food items every month was a very large can of peanut butter. My mom came up with a recipe for peanut butter cookies. It was so easy. It only needed 3 ingredients. I loved those cookies. I still use the recipe with my children today. My daughter really likes them because of how simple it is. 

Ingredients:

  • 1 Cup peanut butter
  • 1 cup sugar
  • 1 egg

Directions:

  1. Mix all ingredients together.
  2. Roll into small balls and place onto an ungreased cookie sheet
  3. Press down with a fork
  4. Preheat oven to 350 degrees Fahrenheit
  5. Bake for about 7 minutes
  6. Let cool before removing from cookie sheet
