Delicious Fudge Squares: Simple Microwave Recipe

Notes on making candy in your microwave
Candy is dandy in your microwave oven. Remember to microwave on MED. HIGH (Roast) so sugar syrup boils, sugar dissolves and blends into candy. Use containers 2 to 3 times larger than quantity to prevent boil-overs and cover candy and snacks when specified. Use a glass plate or stretch plastic wrap tightly across bowl so steam escapes during cooking. Stir candy during cooking so heat is equalized and candy cooks smooth. WATCH CANDY CLOSELY because a microwave oven cooks fast. Check with a candy thermometer (Remove candy from oven first unless using a microwave candy thermometer.)

Ingredients:

  • 3 cups sugar
  • 3/4 cup butter or margarine
  • 1 can (5 oz.) evaporated milk
  • 1 pkg. (12 oz.) semi-sweet chocolate pieces
  • 1 jar (10 oz.) marshmallow creme
  • 1 cup chopped nuts
  • 1 teaspoon vanilla

Directions:

  1. Combine sugar, butter, and milk in buttered large glass mixing bowl. Cover with plastic wrap.
  2. Microwave 10 minutes on MED. HIGH (Roast).
  3. Stir and continue cooking on MED. HIGH (Roast) for 5 to 8 minutes or until mixture forms a soft ball in cold water. You can also check it was a candy thermometer to see if it has reached the correct temperature for soft ball.
  4. Stir in chocolate pieces until melted.
  5. Fold in marshmallow creme, nuts and vanilla.
  6. Pour into buttered 13 x 9-inch pan.
  7. Chill until firm; cut into squares. Make about 74 small Fudge Squares

Homemade Candy Recipes: Aunt Myrle’s Favorites


 My Aunt Myrle was one of the best candy makers that I know. Several years ago, I asked her to share some recipes with me. She sent me a handwritten piece of paper with two recipes on it. The recipes are as follows:

Aunt Myrtle’s Fudge
  • 1 tall can milk (condensed milk)
  • 2 T butter (2 tablespoons)
  • 4 1/2 cups sugar
  • dash of salt
  • 1 – 12 oz pack of semi-sweet chocolate
  • 3-4 oz sweet cooking chocolate
  • 1 pint marshmallow cream
  • 2 or more cups chopped pecans 
  1. Combine milk, butter, sugar, and salt in a saucepan.
  2. Bring to a rolling boil stirring often.
  3. Reduce heat and simmer 6 minutes.
  4. Meanwhile, place the other ingredients except pecans in a large bowl. 
  5. Gradually pour the boiling mixture over the chocolate and marshmallows and beat until the chocolate is melted.
  6. Stir in the pecans and pour in a large, buttered pan. 
  7. Store in fridge or cool place several hours to harden before cutting in squares.
Just Candy
  • 2 cups of pecans
  • 1 pack of almond bark chocolate
  • 5 pieces of Carmel 
  1. Chop 2 cups pecans. (Get really small)
  2. Melt 1 pack of almond bark chocolate in the microwave. 
  3. Melt caramel
  4. stir in caramel to the chocolate
  5. mix all together quickly and drop by Spoonfuls on waxed paper.
  6. Let cool for about 5 minutes.
