Cactus and Scrambled Eggs

The picture shows a jar of cactus that is ready for eating and cooking.

Ingredients:

  • 1 cup of
    Cactus (drained)
  • 6 eggs
  • ½ chopped
    onion (optional)
  • Cooking oil
Directions:
  1. Over medium heat with a little oil, cook the cactus until tender. The pictures shows the cactus being cooked.
  2.  Beat eggs.
  3. When cactus is tender, add in the
    eggs. Salt and pepper to taste.
  4. Cook until egg is done.
