Ingredients:
- 4 medium (about 4 C. pieces)
- 1 medium onion
- 2 tsp. salt
- 2 eggs
- 1 cup flour
- cooking oil
What You Do:
- Peel potatoes and cut into large
- Shred potatoes
- Dice the onion
- Mix shredded potatoes, salt, onion, eggs, and flour.
- Heat 2 Tbsp. oil in pan. Add more oil as needed.
- Spoon by tablespoonfuls into oil, and fry on one side until brown. Turn and fry on other side.
- Drain on paper towel.
