BEEF & BEAN ENCHILADAS
Active Time: 20 minutes, Total Time: 50 minutes, Amount: 8 servings
INGREDIENTS:
- 1 pound lean ground beef
- 1 cup chopped onion
- 1 (16 ounce) can Refried Black Beans
- 3 (10 ounce) cans mild enchilada sauce
- 4 cups Shredded Mexican Style Cheddar Jack Cheese, divided
- 8 (8-inch) flour tortillas
DIRECTIONS:
- In large skillet over medium heat, cook and crumble beef and onions until no longer
pink; drain. - Stir in black beans and 1 1/2 cans enchilada sauce.
- Place ½ cup enchilada sauce in bottom of a 13×9-inch baking dish.
- Place 1/2 cup meat mixture and ¼ cup cheese in each tortilla; roll up.
- Place in baking dish; top with remaining enchilada sauce and cheese.
- Bake in a preheated 375°F oven 30 minutes or until cheese is bubbly and golden brown.
