Whipped (Mashed) Potatoes
Ingredients:
- 4 medium-size (about 1 1/3 lbs.) potatoes, cut in quarters
- 2 tablespoons butter or margarine
- ½ cup hot milk
- 1 teaspoon salt
- 1/2 teaspoon white or black pepper
Directions:
- Wash potatoes, pare (to trim off an outside, excess, or irregular part) and cook covered in boiling salted water.
- Cook about 20 min., or until potatoes are tender when pierced with a fork.
- Drain.
- To dry potatoes, shake pan over low heat.
- Mash potatoes thoroughly.
- Whip in butter or margarine and milk and a mixture of salt and pepper until potatoes are light and fluffy.
- If necessary, keep potatoes hot over simmering water and cover with folded towel
until ready to serve.
