Fluffy Mashed Potatoes in 30 Minutes

Whipped (Mashed) Potatoes

Ingredients:

  • 4 medium-size (about 1 1/3 lbs.) potatoes, cut in quarters
  • 2 tablespoons butter or margarine
  • ½ cup hot milk
  • 1 teaspoon salt
  • 1/2 teaspoon white or black pepper

Directions:

  1. Wash potatoes, pare (to trim off an outside, excess, or irregular part) and cook covered in boiling salted water.
  2. Cook about 20 min., or until potatoes are tender when pierced with a fork.
  3. Drain.
  4. To dry potatoes, shake pan over low heat.
  5. Mash potatoes thoroughly.
  6. Whip in butter or margarine and milk and a mixture of salt and pepper until potatoes are light and fluffy.
  7. If necessary, keep potatoes hot over simmering water and cover with folded towel
    until ready to serve.
    About 2 cups Whipped Potatoes
    30 min.
