Simple Cabbage and Corned Beef Hash Soup

Using a can of corned beef hash as the flavorful base, this recipe builds gently with tender potatoes, sweet carrots, hearty cabbage, and aromatic onion. Ingredients:

  • 1 Can Corn beef hash
  • 2 bay leaves
  • 2 medium potatoes, peeled and quartered
  • 3 medium carrots, quartered
  • 1 medium onion, cut into 6 wedges
  • 1 small cabbage, cut into 6 wedges
  • Salt and black pepper to taste
  • 1 tablespoon cooking oil

Directions

  1. Add oil to a large saucepan and place over medium heat.
  2. Add potato, carrot, and onion.
  3. Cook until the onion starts to brown.
  4. Add in the cabbage and bay leaves.
  5. Add salt and pepper to taste.
  6. Cover with water and cook for 15 to 20 minutes or until tender.
  7. Discard bay leaves.
  8. Add in the can of corn beef hash and cook for about 5 to 10 minutes.
