COOKOUT POTATOES are great. It is possible to cook these in the oven but it takes longer.
Ingredients:
- 5 slices bacon (turkey bacon works great if fried in a little cooking oil)
- 3 large-sized potatoes
- Salt to taste
- Pepper to taste
- 1 large onion
- ½ pound cheddar cheese (block cheese)
- 1 stick (4 ounces) butter or margarine
Directions:
- Fry bacon in a skillet over low heat until
crisp. - Drain on paper towels.
- Crumble bacon into small pieces.
- Peel potatoes, slice them thin, then put them on a large piece of foil.
- Sprinkle with salt and pepper.
- Spread bacon crumbs over potatoes.
- Peel the onion, cut thin slices, and place them on the crumbs.
- Cut cheese into small cubes and dot over onion
slices. - Cut butter into squares and cover the cheese with them.
- Wrap the foil around this potato mixture and seal the edges tightly.
- Cook over hot coals for 1 hour. Turn over several times while cooking.
Serves 4.
