Creamy Cheddar Potatoes Recipe

Special Creamed Potatoes

Ingredients:

  • 3 oz. sharp Cheddar cheese (about 3/4 cup, grated)
  • 4 medium-size (about 1 1/3 lbs.) potatoes
  • 1 cup water
  • 1 teaspoon salt
  • ½ cup (about 1 medium-size) chopped onion
  • ½ cup milk
  • ½ teaspoon pepper

Directions:

  1. Grate Cheddar cheese and set aside.
  2. Wash, pare (to trim off an outside, excess, or irregular part) and dice potatoes.
  3. Bring water and salt to boiling in a saucepan.
  4. Add potatoes with onion to saucpan.
  5. Cover and cook 10 min.
  6. Uncover and continue cooking slowly until almost all the water is evaporated and the potatoes are tender. Turn occasionally and move gently with a spoon.
  7. Remove from heat. Blend in grated cheese, milk and pepper.
  8. Heat and stir until cheese is melted.
