Special Creamed Potatoes
Ingredients:
- 3 oz. sharp Cheddar cheese (about 3/4 cup, grated)
- 4 medium-size (about 1 1/3 lbs.) potatoes
- 1 cup water
- 1 teaspoon salt
- ½ cup (about 1 medium-size) chopped onion
- ½ cup milk
- ½ teaspoon pepper
Directions:
- Grate Cheddar cheese and set aside.
- Wash, pare (to trim off an outside, excess, or irregular part) and dice potatoes.
- Bring water and salt to boiling in a saucepan.
- Add potatoes with onion to saucpan.
- Cover and cook 10 min.
- Uncover and continue cooking slowly until almost all the water is evaporated and the potatoes are tender. Turn occasionally and move gently with a spoon.
- Remove from heat. Blend in grated cheese, milk and pepper.
- Heat and stir until cheese is melted.
