Delicious Stuffed Tomatoes Recipe

These savory stuffed tomatoes bring together simple ingredients in a way that feels both comforting and elegant. Each tomato becomes a little edible bowl filled with tender sausage, aromatic onions and garlic, and soft, consommé‑kissed breadcrumbs that soak up every bit of flavor. As they bake, the tomatoes turn sweet and velvety, the tops gently roasting while the filling becomes golden and fragrant. It’s the kind of dish that feels right at home on a family table—easy to prepare, deeply satisfying, and perfect for showcasing fresh, firm tomatoes at their best.

What is needed:

  • 1/4 pound sausage meat
  • 4 firm tomatoes
  • 1/2 cup bread crumbs
  • 2 tablespoons consommé or bouillon
  • 1 small onion, minced
  • 1 clove garlic, minced
  • 2 tablespoons chopped parsley
  • Butter or margarine

What to do:

  1. Heat the oven to 300°f.
  2. Slice tops off the tomatoes. Scoop out the centers.
  3. Discard seeds and chop up the centers.
  4. Set aside the tops and centers.
  5. Moisten bread crumbs with consommé.
  6. Cook minced onion and garlic in butter until soft.
  7. Mix together with sausage meat, breadcrumbs, onion, and garlic, and parsley.
  8. Stuff tomatoes with this mixture and sprinkle with fine bread crumbs.
  9. Dot with butter and put on the tomato caps.
  10. Bake in a lightly oiled baking dish for 35 minutes.
