Quick Chicken Noodle Soup in 45 Minutes

Chicken Noodle Soup is a comfort food. Nothing is better than home cooked chicken noodle soup when it is cold outside or you are feeling under the weather. This recipe makes 2 to 4 servings. It takes about 45 minutes to make.

INGREDIENTS

  • 3 tablespoons butter or olive oil
  • 1 large carrot, chopped
  • 2 celery stalks, chopped
  • 1/2 small onion, chopped
  • 2 cloves garlic, chopped
  • 2 tablespoons tomato paste or 2 tablespoons ketchup
  • Salt and pepper
  • 5 cups water
  • 1 large or 2 small boneless chicken breasts (about 8 ounces)
  • 4 ounces angel hair pasta or thin egg noodles
  • 1/4 cup chopped fresh basil or parsley for garnish

STEPS

  1. Put the butter or olive oil in a large pot over medium heat. When the butter has melted or the oil is warm, add the carrots, celery, onion, and garlic.
  2. Cook, stirring every minute or so, until the vegetables are soft, 3 to 5 minutes.
  3. Add the tomato paste and sprinkle with salt and pepper.
  4. Cook and stir until the paste coats the vegetables.
  5. Add the water and stir up any crusty bits from the bottom of the pot.
  6. Slip the chicken into the water and adjust the heat so the soup bubbles gently.
  7. Cover the pot.
  8. Let the soup cook without stirring for 5 minutes, then check to make sure the liquid is still bubbling and stir.
  9. Cover the pot and check again in another 5 minutes.
  10. Use tongs to carefully lift the chicken out of the soup onto a plate.
  11. Cut the thickest part with a small knife. If any pinkness remains in the center, return it to the pot for another 5 minutes (and wash the plate so you don’t use it again).
  12. When the chicken is ready, put it on a cutting board and use a knife and fork to cut it into chunks.
  13. Return the chicken to the pot, add the noodles, and bring the soup to a boil.
  14. Cook, stirring every minute, until the noodles are tender but not mushy. Start checking after 3 minutes.
  15. Remove the pot from the heat, carefully taste a sip of the broth, and add salt and pepper if you like.
  16. Ladle the soup into bowls, sprinkle with the basil and parsley, and eat as soon as it’s cool enough.

Delicious Turkey with Honey and Herbs

Prep: 10 min. Bake: 3½ hours Makes: 18 servings

Ingredients

  • 1 turkey (14 to 16 lbs.)
  • ¼ cup olive oil
  • 2 tsp. dried thyme
  • 1½ tsp. salt, divided
  • 1/4 tsp. pepper, divided
  • 1 cup honey
  • 1 cup corn syrup
  • 1/4 cup butter, melted
  • 2 tsp. dried rosemary, crushed
  • 1 tsp. rubbed sage
  • 1 tsp. dried basil

Directions

  1. Brush turkey with olive oil; tie the drumsticks together. Place the turkey breast side up on a rack in a roasting pan.
  2. Combine the thyme, 1 tsp. salt and 1 tsp. pepper; sprinkle evenly over turkey. Bake the turkey, uncovered, at 325° for 2 hours .
  3. In a bowl, combine the honey, corn syrup, butter, rosemary, sage, basil, and remaining salt and pepper. Brush over turkey.
  4. Bake until a thermometer inserted in thickest part of thigh reads 170°-175°, about 90 minutes longer, basting frequently with pan drippings.
  5. Cover loosely with foil if turkey browns too quickly. Remove turkey from oven. Cover and let stand for 15 minutes before carving.

Easy Dinner rolls for the Holidays

Prep: 30 min. and rising time / Bake:15 min. /Makes: 1 dozen

Ingredient

  • 3 cups All-purpose flour
  • 2 tbsp. Sugar
  • 1 pkg. (1/4 oz.) active dry yest
  • 1 tsp salt
  • 1cup water
  • 2 tbsp butter
  • Melted butter

Steps

  1. In a bowl, combine 2 cups of flour, sugar, yeast, and salt. In a saucepan, heat water and butter to 1200- 130°.
  2. Add to dry ingredients; beat until blended. Add egg; beat on low speed 30 seconds, then on high for 3 minutes. Stir in the remaining flour (batter will be stiff). Do not knead. Cover; let rise in a warm place until doubled, about 30 minutes.
  3. Stir the dough down. Fill 12 greased muffin cups half full. Cover and let the dough rise until doubled, about 15 minutes.
  4. Bake at 350° until golden brown, 15-20 minutes. Cool 1 minute before removing from pan to a wire rack. Brush tops with melted butter.

Manicotti with Spinach, cheese, and Mushrooms

SERVINGS 5


INGREDIENTS:

  • 1 box Manicotti
  • 1 jar Marinara sauce
  • 2 tablespoons extra virgin olive oil or your favorite cooking oil
  • 1 clove garlic, chopped
  • 12 ounces ricotta cheese
  • 12 ounces mushrooms, chopped
  • 12 ounces fresh spinach or frozen spinach
  • 1 cup shredded cheese, divided
  • Salt and black pepper to taste

INSTRUCTIONS:

  1. Cook manicotti in boiling water for 7 minutes.
  2. Drain and cool on a sheet pan. Set aside.
  3. In a skillet heat olive oil with garlic. (If using frozen spinach, add it now.)
  4. Add mushrooms, then season with salt and pepper and brown.
  5. Steam the spinach (if using fresh spinach); chop well.
  6. Mix ricotta, mushrooms, spinach, salt, pepper, and half the shredded cheese.
  7. Preheat the oven to 400 degrees.
  8. Grease a 9″ x 13″ baking dish; add half the sauce.
  9. Fill the manicotti. Use a piping bag with a big hole to help you fill the manicotti.
  10. Arrange the manicotti, cover with the remaining sauce and shredded cheese.
  11. Bake covered in the oven at 400°F for 30 minutes.

Easy One-Pan Beef Taco Skillet Dinner

Prep/cook time: 20 minutes


Ingredients:

  • 1 lb ground beef
  • 1 can (10 oz.) Campbell’s tomato soup
  • 1 cup pace chunky salsa or Picante sauce
  • ½ cup water
  • 8 flour or corn tortilla (6-inches), cut into 1-inch pieces
  • 1 cup shredded
  • cheddar cheese

Directions:

  1. Cook beef in skillet until browned. Pour off fat.
  2. Add soup, salsa, water, tortillas, and half the cheese. Heat until it comes to a boil.
  3. Cover and cook over low heat 5 minutes or until hot.
  4. Top with remaining cheese.
    Makes 4 servings


Easy Beef and Beans Taco Recipe

Quick Beef ‘n’ Beans Tacos
Prep time: 15 minutes Cook time: 10 minutes

Ingredients:

  • 1 lb ground beef
  • 1 small onion, chopped (about 1/4 cup)
  • 1 can (11 oz) Campbell’s chili beef soup
  • ¼ cup water
  • 10 taco shells
  • Shredded cheddar cheese
  • shredded lettuce
  • diced tomatoes
  • sour cream

Directions:

  1. In medium skillet over medium-high heat, cook beef and onion until beef is browned, stirring to separate meat. Pour off fat.
  2. Add soup and water. Reduce heat to low. Cover and cook 5 minutes.
  3. Divide meat mixture among taco shells. Top with cheese, lettuce, tomatoes, and sour cream.
    Makes 10 tacos

Cheeseburger Pie: Quick & Delicious

Cheeseburger Pie
Ingredients:

  • 1 lb. hamburger
  • 1 small onion, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 ½ cup milk
  • 3/4 cup self-rising flour.
  • 3 eggs
  • 1 cup shredded cheese
  • 1 medium tomato (diced)

Directions:

  1. Heat oven to 400°
  2. Grease deep dish pie pan.
  3. Brown beef and onion.
  4. Drain.
  5. Stir in salt and pepper.
  6. Spread into pie pan.
  7. Beat milk, flour and eggs until smooth.
  8. Pour into pie pan.
  9. Bake 25 minutes.
  10. Top with tomatoes and cheese.
  11. Bake until knife inserted in center comes out clean, 5 to 10 minutes.
  12. Cool for 5 minutes.
