Fiesta Ceviche


Ingredients

  • Corn Tortilla Chips
  • 1-pound Fresh Tilapia cut into small square pieces
  • 1 cup chopped tomato (remove seed and pulp)
  • 1 cup of minced onion
  • 2 1/2 cups fresh lime juice or lemon juice
  • 2 chopped Serrano peppers
  • 2 avocados (diced)
  • 1/2 cup finely chopped cilantro leaves
  • Salt to taste
  • Hot Sauce (Optional)

Directions:

  1. In a bowl place fish squares and two cups of lime juice. 
  2. Cover and place in refrigerator for at least one hour or until fish turns white.
  3. Drain lime juice.
  4. Mix everything in a large bowl (fish, lime juice, tomatoes, onion, peppers, cilantro and salt to your liking).
  5. Then add diced avocado just before serving.
  6. Enjoy your Fiesta Ceviche with Corn Tortilla Chips and hot sauce.

Quick and Easy Stuffed Fish Recipe

Stuffed fish is a fast tasty meal. We like to have this on Friday nights.

Ingredients:

  • Stuffing (Prepared) I have linked to a great stuffing recipe.
  • 2 pounds plain, raw fish fillets
  • 2 Tablespoons Lemon Juice (it is possible replace the lemon juice, black pepper, margarine or butter and salt with lemon pepper seasoning)
  • 1/4 cup margarine or butter
  • 1/4 black pepper
  • Salt (to taste)


Directions:

  1. Preheat the oven to 350 degrees.
  2. Rinse fish under cold running water. Pat dry with paper towels.
  3. Spray baking dish with no-stick cooking spray. Put half the fish in the dish.
  4. Spoon the stuffing over the fish. Place the remaining fish fillets over the stuffing.
  5. Melt remaining 1/4 cup margarine. Stir in lemon juice and pepper. Spoon over the top layer of fish. (Or if you are using the lemon pepper seasoning use it.)
  6. Cover with aluminum foil and bake 30 minutes or until the fish pulls apart easily in layers.

Creamy Fish Chowder Recipe: Easy and Delicious

Ingredients:

  • 1 slice bacon (turkey bacon can be used), diced
  • 1 small onion, chopped
  • 1 cup cubed potatoes (you can leave the peeling on if you want)
  • about 1 pound of cooked fish, broken up into small pieces
  • 2 cups water
  • 2 cups milk
  • 3 Tablespoons margarine, melted
  • 2 Tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

What to Do

  1. Cook bacon in the large saucepan over low heat until crisp. If using turkey, cook with a little bit of cooking oil.
  2. Add onion and cook until it is soft.
  3. Carefully add potatoes and water. Turn the heat up to high and bring to a boil. Turn the heat down to medium and cook until the potatoes are done. This should take about 20 minutes.
  4. Add the fish and cook for about 2 minutes.
  5. Add milk and cook 5 minutes.
  6. Mix melted margarine, flour, salt, and pepper together. Add to the chowder. Cook, stirring constantly until the chowder is thick and hot.
  7. Serve immediately.

Baked Lemon Pepper Fish

Ingredients:
  • fish fillets of your choice
  • lemon pepper seasoning
  • Fish sauce Supreme (Tarter sauce) Optional 
Directions:
  1. Preheat oven to 400 degrees
  2. Put fish onto pan.
  3. Sprinkle both sides of the fish with the lemon pepper seasoning.
  4. Bake for 10 to 15 minutes or until it flakes easy with a fork.
