Comforting Split Pea Soup with Smoked Sausage


Prep: 20 minutes Cook: 1½ hours Makes: 4 main-dish servings

Ingredient:

  • 2½ cups water
  • 1½ cups dry split peas, rinsed and drained
  • 1 14-ounce can reduced-sodium chicken broth
  • 1-pound smoked sausage (cut into small pieces)
  • ¼ teaspoon dried marjoram, crushed
  • Dash black pepper
  • 1 bay leaf
  • ½ cup chopped carrot (1 medium)
  • ½ cup chopped celery (1 stalk)
  • ½ cup chopped onion (1 medium)
  • 2 tablespoons cooking oil

What to do:

  1. In a large saucepan add cooking oil and place over medium heat. Add in the sausage onion, celery, and carrots.
  2. Cook until the sausage and the onion is starting to brown.
  3. Stir in water, split peas, broth, marjoram, pepper, and bay leaf. Bring to boiling; reduce heat.
  4. Simmer, covered, for 1 hour or until the peas are done, stirring occasionally.
