There’s something wonderfully old‑fashioned about a Strawberry Jam Sandwich Cake. It’s the kind of dessert that feels like it came straight from a grandmother’s kitchen—simple layers, sweet jam, and a soft vanilla crumb that makes every bite feel like a little celebration. This cake starts with two tender vanilla layers, then gets “sandwiched” together with creamy frosting and warm, runny strawberry jam. As the jam settles into the frosting, it creates the prettiest ribbon of berry sweetness right through the center.
A gentle snowfall of powdered sugar on top gives it that classic tea‑time charm, and if you use a doily for the dusting, you’ll have a lacy pattern that looks like it came from a bakery window. Whether you’re serving it for Sunday lunch, a church gathering, or a simple family treat, this cake brings joy with every slice—sweet, soft, and beautifully nostalgic.
Ingredients:
- 2 batches cake batter
- 1 batch vanilla frosting
- 1 cup strawberry jam or jelly
- Strawberry Jam (Liquid Pectin), or
- Strawberry Jam (Powdered Pectin), or
- Strawberry Jelly, or
- Rhubarb–Strawberry Jam
- 1 cup powdered sugar
Supplies:
- 28-inch cake pans
- Small glass bowl
- Spoon
What to do:
- Preheat the oven to 350 degrees.
- Grease and flour the cake pans.
- Prepare two batches of vanilla cake batter by doubling the ingredients.
- Pour an equal amount of batter into each cake pan.
- Bake the two layer cakes for 25-30 minutes or until done.
- Cool the cakes on wire racks while they are still in
their pans. - While the cakes are cooling, prepare the frosting.
- Remove one cake from the pan and place it on a plate.
- Cover the top of the cake with frosting (but don’t spread any on
the sides!). - Measure the jam into the glass bowl. Microwave it on medium power
until it is liquid and runny. Be careful-the jam will be hot. - Spread the jam on top of the frosting.
- Carefully remove the other cake layer from the pan, and place it
on top of the first cake layer. - Sift the powdered sugar on top of the cake.
Tip:
If you have a doily, place it on top of the cake before sifting the powdered sugar. It will make a verry pretty design on the cake!
