Delicious Zucchini Cold Soup Recipe

Serves 6-8

Ingredients:

  • 2 cups grated zucchini
  • 2 cups water
  • 1 tablespoon dried minced onion
  • 2 chicken bouillon cubes
  • Grated pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dillweed
  • 1/2 teaspoon nutmeg
  • 1(13-ounce) evaporated milk
  • 1/2 cup water
  • 2 tablespoons cornstarch

What to do

  1. In a 2-quart casserole combine zucchini, water, onion, bouillon cubes, pepper, garlic powder, dillweed, and nutmeg.
  2. Microwave for 8 minutes on HIGH.
  3. Puree in blender. Pour back into bowl.
  4. In a small dish combine the com starch with the 1/2 cup water: mix well.
  5. Pour into the puree, add the can of milk, and microwave the entire mixture until thick, for 5-8 minutes on HIGH.
  6. Refrigerate to cool. Serve as a cold soup with garish of paprika and parsley.

Hearty Cabbage Beef Soup Recipe

CABBAGE BEEF SOUP

Ingredients:

  • 1/2 pounds stew meat, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 bay leaves
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 4-5 medium carrots, sliced
  • 1 cup chopped cabbage
  • Pinch of oregano
  • 1 tablespoon Worcestershire sauce
  • 1 (20 oz can) Italian style tomatoes
  • 1 beef bouillon cube

Directions:

  1. Place meat in 3-quart pot and cover with cold water.
  2. Add salt, pepper, and bay leaves.
  3. Bring to boil; then turn heat to low.
  4. Add celery, onion, carrots, and cabbage.
  5. Simmer 2-1/2 hours or until meat is tender.
  6. Remove bay leaves.
  7. Cut meat into small pieces and return to pot.
  8. Add oregano, tomatoes, Worcestershire sauce, and bouillon cube.
  9. Simmer 30 minutes.
  10. Serve.

Delicious Chocolate Chip Nut Brownies Recipe

What you need

  • 1 cup (2 sticks) butter, softened
  • 1/2 cup packed brown sugar
  • 1 cup granulated sugar
  • 2 tsp. vanilla
  • 2 large eggs
  • 2 1/2 cups All-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1cup cocoa power
  • 2 cups Semi-Sweet Chocolate Chips
  • 1 cup nuts [Pecans]

What You Do

  1. Heat oven to 300°F.
  2. Grease an 8 x 8-inch pan and set aside.
  3. Beat butter, both sugars and vanilla in large bowl on MEDIUM speed until creamy. Beat in eggs.
  4. Blend in flour, baking soda and salt and cocoa power on LOW until mixed.
  5. Stir in chocolate chips and nuts.
  6. Put in pan cook for 22-30 minutes.
  7. Remove to wire racks and finish cooling
  8. Enjoy

Monkey Bread

Serves 8
Prep time 10 minutes
Cook time: 2-3 hours

MONKEY BREAD is a knotty-looking loaf of sweet bread made from balls of dough coated with cinnamon, sugar, and melted butter. It’s traditionally served warm so that the sticky baked pieces can be pulled apart. The name “monkey” refers to how you eat this sweet treat-with your hands.

Ingredients

  • 1/2 cup packed light brown sugar
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 6 tablespoons unsalted butter,
  • melted and cooled
  • Vegetable oil spray
  • 1/3 cup confectioners’ sugar
  • 2 teaspoons milk
  • 1 pound pizza dough, room temperature [store-bought]

Cooking Equipment

  • 3 small bowls
  • 8-inch round cake pan
  • Ruler
  • Kitchen shears
  • plastic wrap
  • Oven mitts
  • Cooling rack
  • Large plate
  • Spoon

What to do:

  1. In small bowl, stir together brown sugar, cinnamon, and nutmeg. Place melted butter in second small bowl. Spray 8-inch round cake pan with vegetable oil spray.
  2. Spray counter lightly with vegetable oil spray.
  3. Place dough on greased counter and pat into 6-inch square. Use kitchen shears to cut dough into 36
  4. pieces roll each piece of dough into ball.
  5. Dip each ball in melted butter to coat, roll in brown sugar mixture, then place in greased pan.
  6. Cover bottom of pan with dough balls in single layer.
  7. Cover pans tightly with plastic wrap and leave in warm place until dough balls are puffy and have risen slightly (about 1/2 inch), 1 to 2 hours.
  8. Adjust oven rack to middle position and heat oven to 350 degrees. Discard plastic.
  9. Place pan in oven and bake until top of monkey bread is light golden brown, 20 to 25 minutes.
  10. Use oven mitts to remove monkey bread from oven (ask an adult to help).
  11. Place pan on cooling rack and let monkey bread cool for 5 minutes (no longer).
  12. Place large plate on top of pan. Ask an adult to carefully flip out monkey bread onto plate.
  13. Remove pan. Let cool for 10 minutes before glazing.
  14. In third small bowl, stir confectioners’ sugar and milk until smooth.
  15. Use spoon to drizzle glaze over monkey bread. Serve warm.

Microwave Rice Cooking: Tips for 4 Servings

It is recommended that only 1 cup rice be prepared in the microwave at a time. Microwave ovens vary. Cooking times are approximate.

Makes 4 servings of rice, about 3/4 cup each.

What to do

  1. In a 2-quart microwave-safe dish, combine 2 cups water and 1 cup rice.
  2. Cover and microwave on HIGH for 5 minutes. Reduce setting to 50% power and microwave for 20 minutes. Let stand for 5 minutes. Fluff lightly with a fork and serve.

Easy One Pot Penne Pasta Recipe in 50 Minutes

SERVES 4
PREP TIME: 15 MINUTES
COOK TIME: 35 MINUTES

Ingredients:

  • 2 tablespoons extra-virgin olive oil, plus extra for drizzling
  • 1 onion, peeled and chopped fine
  • 1 teaspoon salt
  • 4 garlic cloves, peeled and minced
  • 1 (28-ounce) can crushed tomatoes
  • 1/4 teaspoon sugar
  • 3/4 cups penne pasta
  • 3 cups water
  • 1/4 cup chopped bail
  • Grated Parmesan cheese

Cooking Equipment

  • Dutch oven
  • Wooden spoon
  • Ladle
  • Serving bowls

What to do:

  1. In Dutch oven, heat oil over medium heat for 1 minute (oil should be hot but not smoking).
  2. Add onion and salt and cook, stirring often with wooden spoon, until onion is softened, about 5 minutes. Stir in garlic and cook for 30 seconds.
  3. Stir in tomatoes and sugar. Reduce heat to medium-low and simmer gently, stirring occasionally, for 10 minutes.
  4. Carefully stir in pasta and water. Increase heat to medium-high and cook, stirring often, until pasta is tender, 16 to 18 minutes.
  5. Turn off heat. Drizzle pasta with extra oil and sprinkle basil over top.
  6. Use ladle to divide pasta and sauce among individual bowls. Serve with Parmesan cheese.

INGREDIENTS:

  • Vegetable oil spray
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup unsweetened applesauce
  • 8 tablespoons unsalted butter, melted and cooled
  • 1/4 cup apple cider or apple juice
  • 1 large egg
  • 1 teaspoon vanilla extract

COOKING EQUIPMENT

  • Aluminum foil
  • Ruler
  • 8-inch square metal baking pan
  • 3 bowls (1 medium, 1 large, 1 small)
  • Whisk
  • 1-tablespoon measuring spoon
  • Rubber spatula
  • Toothpick
  • Oven mitts
  • Cooling rack
  • Cutting board
  • Chef’s knife

Directions:

  1. Adjust oven rack to middle position and heat oven to 325 degrees.
  2. Line the pan with aluminum foil. Make sure to leave some over the edge going all four directions. This will allow you to lift the cake out of the pan when it is ready.
  3. Spray foil lightly with vegetable oil spray.
  4. In medium bowl, whisk together flour, baking soda, and salt.
  5. In large bowl, whisk sugar, cinnamon, and nutmeg until well combined. Transfer 2 tablespoons sugar-spice mixture to small bowl and reserve for sprinkling.
  6. Add applesauce, melted butter, cider, egg, and vanilla to large bowl with sugar-spice
    mixture and whisk until well combined.
  7. Add flour mixture to applesauce mixture and whisk to combine. Use rubber spatula to
    scrape batter into greased baking pan and smooth top.
  8. Sprinkle reserved sugar-spice mixture evenly over batter.
  9. Place baking pan in oven. Bake until toothpick inserted in center comes out clean- about 35 to 40 minutes.
  10. Use oven mitts to remove baking pan from oven (ask an adult for help). Place baking pan on cooling rack and let cake cool in pan for 10 minutes.
  11. Use foil to carefully lift cake out of baking pan and place on cooling rack.
  12. Let cake cool for at least 30 minutes before serving. Transfer cake to cutting board and discard foil.
  13. Cut into pieces and serve.

Easy Sweet and Tangy Sauce Recipe

Sweet and Tangy Sauce

SERVES 4
PREP TIME: 10 MINUTES

Cook Time: about 6 minutes

Ingredients:

  • 1/4 cup maple syrup
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice, squeezed from 1 lime
  • 2 garlic cloves, peeled and minced
  • Salt and pepper

Directions:

  1. In medium saucepan, combine maple syrup, vinegar, soy sauce, lime juice, and garlic.
  2. Cook maple syrup mixture in saucepan over medium heat, stirring occasionally with rubber spatula, until thick and syrupy, 4 to 8 minutes (sauce will be very bubbly
    when it thickens).
  3. Remove from heat.
  4. Spoon over the meat of your choice.

Notes:

This is good served over fish such as salmon and chicken tenders.

Quick Microwaved Beef Stew

GRANDMA’S BEEF STEW

Ingredients:

  • 1 to 1 1/4 lb. beef stew meat
  • 1 lb. red potatoes, cubed
  • 2 carrots, sliced
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 1 can (16 oz.) whole kernel corn, well drained
  • 1 can (6 oz.) tomato paste
  • 1 cup water
  • 1 tablespoon instant beef bouillon
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Directions:

  1. Combine all ingredients in water-soaked clay pot. Cover with water-soaked lid.
  2. Microwave 15 minutes on HIGH. Stir well and recover.
  3. Microwave 55 to 60 minutes on MEDIUM (Simmer), or until meat is fork tender.
  4. Let stand, covered, 5 minutes before serving.
