Healthy Green Pepper Stew with Potatoes

Serves 4

Ingredients:

  • 1 onion, [chopped]
  • 4 tablespoons shortening
  • 2 cups water
  • 2 green peppers, [chopped]
  • 2 tomatoes, [chopped]
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium sized potatoes, [diced]
  • 2 tablespoons flour

What to do:

  1. Brown onion in shortening.
  2. Add water, peppers, tomatoes, salt and pepper.
  3. Cook for 20 minutes.
  4. Add potatoes and cook until potatoes are soft but not mushy.
  5. Mix flour with small amount of water.
  6. Add just enough to vegetables to thicken.

Easy Herbed Potatoes Recipe

HERBED POTATOES

Ingredients:

  • 3 or 4 medium potatoes
  • 1 small onion, thinly sliced
  • 2 tablespoons margarine or butter
  • 1 teaspoon dried parsley flakes
  • ½ teaspoon salt
  • ½ teaspoon dried dill weed
  • 1/4 teaspoon paprika

Directions:

  1. Make crosswise cuts 1/2 inch apart in each potato, not cutting all the way through. Place an onion
    slice in each cut. Place potatoes in 9-inch pie plate.
  2. Cover tightly and microwave on high (100%) until potatoes are almost tender, 4 1/2 to 5½ minutes. Microwave margarine uncovered in 1-cup glass measure on high (100%) until melted, 30 seconds to 1 minute.
  3. Stir in remaining ingredients, drizzle over potatoes. Cover and microwave on high (100%) until potatoes are tender, 4 to 5 minutes, 3 or 4 servings.

Easy Cheesy Potatoes Recipe

CHEESY POTATOES

Ingredients:

  • 3 tablespoons margarine or butter
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 3/4 cups milk
  • 1 cup shredded Cheddar cheese (about 4 ounces) (divided)
  • 4 cups 1/8-inch slices potatoes
  • 1/2 cup chopped green onions
  • ½ teaspoon paprika

Directions:

  1. Microwave margarine, flour, salt and pepper uncovered in 2½-quart microwave safe casserole dish on high 1 minute; stir until smooth.
  2. Microwave until bubbly, about 1 minute.
  3. Stir in milk. Cover loosely with parchment paper and microwave until thickened, 5 minutes, stirring every minute.
  4. Stir in 3/4 cup of the cheese.
  5. Place potatoes and onions in casserole, spooning cheese sauce over potatoes. Cover and microwave on medium-high (70%) until potatoes are tender, 18-20 minutes, turning the casserole one quarter turn every 6 minutes.
  6. Mix remaining cheese and paprika together.
  7. Sprinkle over potatoes.
  8. Let stand 5 minutes.

Makes about 8 servings.

Easy Turkey Bacon and Cheese Potato Campfire Recipe

COOKOUT POTATOES are great. It is possible to cook these in the oven but it takes longer.

Ingredients:

  • 5 slices bacon (turkey bacon works great if fried in a little cooking oil)
  • 3 large-sized potatoes
  • Salt to taste
  • Pepper to taste
  • 1 large onion
  • ½ pound cheddar cheese (block cheese)
  • 1 stick (4 ounces) butter or margarine

Directions:

  1. Fry bacon in a skillet over low heat until
    crisp.
  2. Drain on paper towels.
  3. Crumble bacon into small pieces.
  4. Peel potatoes, slice them thin, then put them on a large piece of foil.
  5. Sprinkle with salt and pepper.
  6. Spread bacon crumbs over potatoes.
  7. Peel the onion, cut thin slices, and place them on the crumbs.
  8. Cut cheese into small cubes and dot over onion
    slices.
  9. Cut butter into squares and cover the cheese with them.
  10. Wrap the foil around this potato mixture and seal the edges tightly.
  11. Cook over hot coals for 1 hour. Turn over several times while cooking.
    Serves 4.

Loaded Baked Potatoes Recipe: Easy & Delicious

INGREDIENTS:

  • 4 large russet potatoes
  • Oil
  • Salt
  • 4 tablespoons butter
  • 4 tablespoons sour cream
  • ½ cup chopped chives
  • 1 cup shredded cheese
  • 4 strips cooked, crumbled bacon or turkey bacon


SUPPLIES:

  • Fork
  • Foil
  • Wire rack
  • Measuring cups and spoons
  • Knife
  • Large bowl
  • Spoon

Directions:

  1. Preheat the oven to 375 degrees.
  2. Scrub the potatoes.
  3. Poke several holes in the potatoes with a sharp fork.
  4. Rub the potatoes with a small amount of oil and sprinkle them with salt.
  5. Wrap them in foil.
  6. Bake the potatoes in the oven for 45 minutes to 1 hour.
  7. Remove the potatoes from the oven and set them on a wire rack until they are cool enough to handle.
  8. Slice the potatoes open and remove the insides.
  9. In a large bowl, mix the potatoes with the butter, sour cream, chives, cheese, and bacon until combined.
  10. Spoon equal amounts of the potato mixture into each potato skin.
