Easy Turkey & Broccoli Alfredo Recipe

Turkey & Broccoli Alfredo

Prep/ cook time: 20 minutes

Ingredients:

  • Cream of mushroom soup (10 oz)
  • 1 pack of linguine (8 oz)
  • 1/2 Cup milk
  • 1 cup fresh or frozen broccoli
  • 1/2 cup grated Parmesan cheese
  • 4 tsp ground black pepper
  • 2 tbsp butter or margarine
  • 1-pound skinless, boneless turkey, cubed

Directions:

  1. Prepare linguine according to package directions. Add broccoli for last 4 minutes of cooking time.
  2. Drain and set aside.
  3. In medium skillet over medium-high heat, heat butter. Add turkey and cook until browned, stirring often.
  4. Add soup, milk, cheese, pepper, and linguine mixture and cook through, stirring occasionally. Serve with additional Parmesan cheese.

Makes 4 servings

Easy Cheesy Potatoes Recipe

CHEESY POTATOES

Ingredients:

  • 3 tablespoons margarine or butter
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 3/4 cups milk
  • 1 cup shredded Cheddar cheese (about 4 ounces) (divided)
  • 4 cups 1/8-inch slices potatoes
  • 1/2 cup chopped green onions
  • ½ teaspoon paprika

Directions:

  1. Microwave margarine, flour, salt and pepper uncovered in 2½-quart microwave safe casserole dish on high 1 minute; stir until smooth.
  2. Microwave until bubbly, about 1 minute.
  3. Stir in milk. Cover loosely with parchment paper and microwave until thickened, 5 minutes, stirring every minute.
  4. Stir in 3/4 cup of the cheese.
  5. Place potatoes and onions in casserole, spooning cheese sauce over potatoes. Cover and microwave on medium-high (70%) until potatoes are tender, 18-20 minutes, turning the casserole one quarter turn every 6 minutes.
  6. Mix remaining cheese and paprika together.
  7. Sprinkle over potatoes.
  8. Let stand 5 minutes.

Makes about 8 servings.

Kid-Friendly Cooking: Cheesy Pasta Dish with chicken and broccoli

Note: this is an easy thing to cook with your children. They could make it with a grownup watching and helping them with the draining and the oven.

Prep time: 55 minutes; Oven Heat: 350; Baking time: 30 minutes

What you need:

  • 1box Penne pasta or ziti pasta [14 ounces]
  • 3 cups of frozen broccoli
  • 3/4 cup of precooked chicken strips [about 4 strips should do to get 14 ounces]
  • 1cup cheddar cheese shredded [2ounces]
  • 1 cup Mozzarella cheese shredded [2 ounces]
  • 1/4 cup sour cream
  • 1/4 cup milk [1.5 oz]
  • 2 tablespoons chicken broth
  • A dash of salt
  • A dash of black pepper

Equipment and supplies:

  • pot for cooking pasta and steaming broccoli
  • colander for drain pasta
  • 13/ 9 inch baking dish
  • Mixing bowl
  • Measuring cups /spoons
  • spoon /skillet
  • oven /stove

Directions:

  1. Prepare a baking pan by spraying it lightly with cooking spray.
  2. Heat water for pasta and broccoli. When water comes to a boil add broccoli. Bring back to a boil and add pasta.
  3. Cook pasta according to directions until tender.
  4. Drain pasta.
  5. Place drained pasta and broccoli back in the pot then add the chicken in the pot, mix well.
  6. Then put the broccoli, pasta, and the chicken in the pan.
  7. Preheat the oven to 350 degrees.
  8. Sprinkle shredded cheeses over pasta mixture.
  9. In a mixing bowl combine milk, chicken broth, salt, pepper and sour cream.
  10. Pour milk mixture evenly over the pasta mixture.
  11. Cover baking dish with foil.
  12. Bake 30 minutes, until mixture is bubbly and cheese is melted.
  13. Please enjoy it with your family at the table.

Beef and Cheese Burritos

Beef and Cheese Burritos

Ingredients:

  • 1 lb. Ground beef.
  • 1 Pack shredded cheese.
  • 1 Cup of water
  • 1 Pack taco seasoning
  • 1 Pack flour tortillas.

Directions:

  1. Brown ground beef in a skillet.
  2. Drain beef.
  3. Add taco seasoning and water.
  4. Simmer for 15 minutes on low heat.
  5. Warm tortillas
  6. Add beef to tortilla.
  7. Sprinkle cheese.
  8. Fold into burrito.
  9. Serve

One-Pot Spaghetti with spiced chickpeas

Makes 4 servings | Hands-On Time: 30 minutes
Total Time: 30 minutes

What You Need

  • 3 Tbsp. olive oil, divided
  • 1 (15-oz.) can chickpeas, rinsed and drained
  • Seasonings: ½ tsp. each
    • paprika
    • cumin
    • coriander
    • cinnamon
  • salt and black pepper to taste
  • 1 tsp. garlic powder
  • 1 medium onion, chopped
  • 2 cups vegetable broth
  • 1 (28-oz.) can crushed tomatoes
  • 1/2 (16-oz.) pkg.  Spaghetti
  • 1 (8-oz.) pkg. fresh mozzarella pearls or mozzarella
  • (cubed), if desired

What You Do

  1. Heat 2 Tbsp. oil in Dutch oven on MEDIUM-HIGH heat.
  2. Add chickpeas and seasonings.
  3. Cook and stir until chickpeas are golden, about 5 minutes. Remove from pan and set aside.
  4. Reduce heat to MEDIUM.
  5. Add 1 Tbsp. oil and onion to pan; sauté 2 to 3 minutes.
  6. Add broth, tomatoes, and garlic powder. Heat to boiling.
  7. Add spaghetti, breaking to fit if necessary.
  8. Reduce heat and cover partway; simmer 10 to 12 minutes or until pasta is just tender and sauce is thickened, stirring frequently.
  9. Remove from heat.
  10. Stir in chickpeas and cheese. Sauce will thicken as it stands.

Easy Family Dinner: Tuna Casserole

Active Time: 15 minutes Total Time: 45 minutes Amount: 4 servings

INGREDIENTS:

  • 1 (16 ounce) package Medium Egg Noodles 
  • 1/2 cup milk
  • 1 (10% ounce) can cream of celery soup
  • 1 cup Light Sour Cream
  • 2 (5 ounces) can  Chunk Light Tuna in Water, drained
  • ½ cup  Frozen Peas
  • ½ cup chopped onion
  • 1½ cups crushed  Corn Flakes
  • 1 tablespoon Butter, melted

DIRECTIONS:

  1. Prepare noodles according to package directions, drain.
  2. Meanwhile, in a large bowl, combine soup, sour cream, and milk, salt and pepper to taste.
  3. Stir in tuna, peas, onion, and cooked noodles
  4. Transfer to a 2-quart baking dish that has been sprayed with Cooking Spray.
  5. Toss corn flakes with butter and sprinkle over the top of the casserole.
  6. Bake in a preheated 375°F oven 25-30 minutes or until golden brown and bubbly.

Lasagna

PREP TIME: 20 MIN

INGREDIENTS:

  • 1 box Barilla Oven-Ready Lasagna
  • 2 24 oz jars Marinara sauce
  • 2 tablespoons extra virgin olive oil
  • 1-pound lean ground beef or sausage
  • Salt and black pepper to taste
  • 15 oz container ricotta cheese
  • 4 cups mozzarella cheese, shredded and divided
  • 1/2 cup Parmigiano-Reggiano cheese, grated

INSTRUCTIONS:

  1. Preheat oven to 375° F.
  2. In a large skillet, heat olive oil and brown meat until cooked through, season with salt and pepper to taste.
  3. In a bowl, combine ricotta, 2 cups mozzarella, and Parmigiano cheese. Stir well.
  4. Spray a 9″ x 13″ baking dish with cooking spray.
  5. Pour one cup of sauce on the bottom of the dish and spread evenly.
  6. Place sheets of lasagna side by side (sheets will expand while baking to the ends of the dish).
  7. Pour 1 cup of sauce and 3/4 cup of cheese mixture on the first layer. Top with 1/4 cup mozzarella and 1/3 cup of the cooked meat.
  8. Repeat for 3 more layers.
  9. For the final layer, top with 3 lasagna sheets, add remaining sauce and top with remaining cheese mixture and mozzarella.
  10. Cover with foil; bake for 25 minutes.
  11. Uncover and bake 5 more minutes.
  12. Let rest 15 minutes before serving.

Peanut Butter Chocolate Cookies

Prep time 20-Minute

Ingredients:

  • 1 cup all-purpose flour
  • 6 tablespoons HERSHEY’S Cocoa
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup butter or margarine, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1-2/3 cups (10-oz. pkg.) REESE’S Peanut Butter Chips

Directions:

  1. Heat oven to 350°F.
  2. Stir together flour, cocoa, baking soda, and salt.
  3. Beat butter and sugar in large bowl with mixer until well blended.
  4. Add egg and vanilla; beat well.
  5. Gradually add flour mixture, beating well.
  6. Stir in peanut butter chips. Drop by rounded teaspoons onto an ungreased cookie sheet.
  7. Bake 8 to 9 minutes. (Do not over bake; cookies will be soft.) Cool slightly; remove from cookie sheet to wire rack. Cool completely.

    Makes about 3 dozen cookies.

Manicotti with Spinach, cheese, and Mushrooms

PREP TIME: 30 MIN

INGREDIENTS:

  • 1 box Manicotti
  • 1 jar Marinara sauce
  • 2 tablespoons extra virgin olive oil or your favorite cooking oil
  • 1 clove garlic, chopped
  • 12 ounces ricotta cheese
  • 12 ounces mushrooms, chopped
  • 12 ounces fresh spinach or frozen spinach
  • 1 cup shredded cheese, divided
  • Salt and black pepper to taste

INSTRUCTIONS:

  1. Cook manicotti in boiling water for 7 minutes.
  2. Drain and cool on a sheet pan. Set aside.
  3. In a skillet heat olive oil with garlic. (If using frozen spinach, add it now.)
  4. Add mushrooms, then season with salt and pepper and brown.
  5. Steam the spinach (if using fresh spinach); chop well.
  6. Mix ricotta, mushrooms, spinach, salt, pepper, and half the shredded cheese.
  7. Preheat the oven to 400 degrees.
  8. Grease a 9″ x 13″ baking dish; add half the sauce.
  9. Fill the manicotti. Use a piping bag with a big hole to help you fill the manicotti.
  10. Arrange the manicotti, cover with the remaining sauce and shredded cheese.
  11. Bake covered in the oven at 400°F for 30 minutes.
