Easy Chicken Burritos with Black Beans

Ingredients:

  • 1 tablespoon flour
  • 2 teaspoons Mexican seasoning
  • 1 to 1 1/2 lbs. chicken tenders, cut into 1-inch strips
  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 can (10 oz.) diced tomatoes with lime juice and cilantro
  • 1 cup parboiled long grain rice
  • 1 cup chicken broth
  • 6 (10-inch) burrito size flour tortillas,
  • heated according to package directions,
  • 1 Large Oven Bag
  • Toppers:
    • Shredded lettuce, shredded cheddar
    • cheese, guacamole dip, sour cream,
    • Salsa, Jalapeños, Lime wedges

Directions:

  1. PREHEAT Oven to 400°F. Place Oven Bag in 13x9x2-inch baking pan. 
  2. ADD flour and Mexican seasoning to bag; squeeze bag to blend seasonings.

3. ADD chicken, black beans, tomatoes, and rice to oven bag. Gently squeeze bag to blend ingredients. Arrange ingredients in even layers. 

4.Fold down bag opening two times to hold the bag open. MICROWAVE chicken broth in microwave-safe bowl or measuring cup for about 2 minutes until it is very hot.

5. Carefully pour broth over other ingredients in bag. Carefully unfold bag opening.

6. CLOSE bag with nylon tie. Cut six 1/2-inch slits in top. Tuck ends of bag in pan. BAKE 30 to 35 minutes until chicken reads 170°F on a meat thermometer. Let’s stand for 5 minutes. Serve with tortillas and toppers.

Cooking with Kids: Simple Recipe Ideas

My 11-year-old daughter loves to help me cook and has a passion for making desserts. She’s the main one in our house who prepares the sweets and also assists me in posting the recipes here. These recipes are some of her favorites to make. While they’re great for older kids, younger kids can also try them with a bit of adult supervision.

My family has said this for years that we put everting, but the Kitchen sink in the Jambalaya. We don’t, but it sometimes it seems as if we do.

Ingredients:

  • 1 cup chopped bell pepper
  • 1 cup chopped celery
  • 1 cup chopped green onion
  • 2 cloves garlic, minced
  • 1-16 oz can tomatoes, drained (reserve the juice)
  • 1/2-pound smoked sausage, sliced
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup cooking oil
  • 1 1/2 cups stock or water
  • 1/2-pound chicken, cut into cubes
  • 1 cup chopped onion
  • 1 1/2 cups of rice
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • stock and Worcestershire sauce to equal 2 1/2 cups

Directions:

  1. In a large heavy Dutch oven, sauté sausage and chicken until lightly browned.
  2. Remove from pot. Sauté onions, bell peppers, celery, green onion, and garlic in meat drippings until tender.
  3. Add tomatoes, thyme, pepper and salt.
  4. Cook 5 minutes.
  5. Stir in rice.
  6. Mix together liquid from the stock, tomatoes, and Worcestershire Sauce to equal 2 1/2 cups.
  7. Bring to a boil, reduce to a simmer and add sausage and chicken back to the pot.
  8. Cook uncovered, stirring occasionally for about 30 minutes or until the rice and chicken are done.

Creamy Baked Ziti Recipe for a Crowd

Serves: 4-6 Prep time:15 minutes Cooking time: 45 mins

INGREDIENTS:

  • 16 oz.  Ziti, cooked al dente
  • 8 oz. Mascarpone Cheese
  • 1 tbsp. garlic, minced
  • 8 oz.  mozzarella cheese, shredded
  • 8 oz. Provolone Cheese, shredded
  • 4 oz.  Shredded Parmesan Cheese
  • 35 oz. Pasta Sauce
  • 14 oz. Crushed Tomatoes

INSTRUCTIONS:

  1. Heat oven to 375 degrees
  2. In a large bowl, combine all ingredients but reserve 4 ounces of the shredded mozzarella cheese to the side.
  3. Place the pasta and ingredients into a cooking dish and cover with foil.
  4. Cook for 45 minutes.
  5. Remove lid and place reserved  4 ounces of cheese on top.
  6. Place ziti back into oven and broil on low heat for 4 minutes.

Hush Puppies

This recipe was given to me by my Aunt Edna.

Ingredients:

  • 1 cup Self-rising flour
  • 2 cups corn meal
  • I jalapeno pepper – remove seeds
  • I med. Onion
  • 2 eggs
  • 1 can corn whole
  • 1 can cream style corn
  • Just enough water to mix

Directions:

  1. Mix all of the 1st 7 ingredients together.
  2. Add just enough water to get the mixture to hold together
  3. Heat a pot of cooking oil.
  4. Drop by balls into the oil.
  5. They will float and turn to a golden color when ready. See picture below.
Aunt Edna’ Hush Puppies

How to Make Ancho Chile Sauce (Mole Sauce) for Chicken

Ingredients:

  • 1-4 dried ancho Chiles, stemmed, seeded, and torn into 12-inch pieces (4 cup)
  • 1/4 cup extra-virgin olive oil, divided
  • 1/2 onion chopped
  • 1/8 cup green onion
  • 1 garlic clove, minced
  • 2 tomatoes, diced
  • 2 tablespoons creamy peanut butter
  • 1 teaspoon unsweetened cocoa powder
  • 1/4 teaspoon ground cinnamon
  • 1½ cups chicken broth
  • ½ teaspoon table salt
  • ½ teaspoon pepper
  • 4-6 pieces of chicken thighs, skin and bone removed, cut into cubes

Directions:

  1. Toast ancho in Dutch oven over medium heat, stirring frequently, until fragrant, 2 to 4 minutes;
  2. Add 2 tablespoons oil, onion, green onion, and garlic and cook over medium heat until fragrant, about 1 minute.
  3. Stir in tomatoes, peanut butter, cocoa, and cinnamon and cook until mixture is bubbly, about 2 minutes.
  4. Stir in broth, salt, and black pepper.
  5. Cook, stirring occasionally, until Chile pieces are tender and mixture is slightly thickened, about 5 minutes.
  6. Transfer mixture to blender and add remaining 2 tablespoons oil.
  7. Process until smooth, 30 to 60 seconds, scraping down sides of blender jar as needed.
  8. Return sauce to now-empty pot. Rise the blender with some water and pour into pot.
  9. Nestle chicken into pot and spoon some sauce over top.
  10. Bring to simmer over medium-low heat, then cover and cook until chicken is done.

Healthy Chicken Rotini with Veggies

Prep Time: 30 min. Makes: 6 servings, about 1-1/2 cups each.

Directions:

  • 1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
  • 2 cups water
  • 3 cups rotini pasta, uncooked
  • 1 pkg. (16 oz.) frozen broccoli, cauliflower, and carrot blend
  • 1 can (10 oz.) Tomatoes & Green Chilies, undrained
  • 1/2 lb. (8 oz.) Velveeta, cut into 1/2-inch cubes

Directions:

  1. Cook in large skillet sprayed with cooking spray on medium-high heat 5 min. or until no longer pink.
  2. Stir in water. Bring to boil.
  3. Add pasta; stir. Cover, simmer on medium-low heat 10 min. or until pasta is tender.
  4. Add remaining ingredients; stir.
  5. Cook, covered, 5 to 7 min. or until VELVEETA is completely melted and vegetables are crisp-tender, stirring frequently.

Quick Turkey and Cheese Sandwich Recipe

Prep Time: 5 min./ Total Time: 11 min.
Makes: Makes 4 servings.

Ingredients:

  • 8 slices bread
  • 4 slices of cheese
  • 8 slices Thin Sliced Oven Roasted Turkey Breast
  • 8 tsp. margarine, softened

Directions:

  1. Place a slice of cheese on each of 4 slices of bread.
  2. On top of the cheese place the turkey.
  3. Put the other slice of bread on top of that to make the sandwich.
  4. Spread the margarine or butter evenly over the outsides of the sandwiches.
  5. Cook in a skillet on medium heat for 3 min. on each side or until golden brown on both sides.

30-Minute Ground Beef Pizza Roll Recipe

Prep Time: 30 min. Total Time: 1 hour 5 min. (incl. cooling)/Makes: 6 servings.

What You Need

  • 1 lb. lean ground beef
  • 4 slices Bacon, cut into 1/2-inch pieces
  • 1 small onion, chopped
  • 1/2 lb. (8 oz.) Velveeta cut into 1/2-inch cubes
  • 1 pkg. (13.8 oz.) refrigerated pizza crust

Directions:

  1. HEAT oven to 400°F.
  2. Brown ground beef with bacon and onions in large skillet on medium-high heat; drain.
  3. Return meat mixture to skillet.
  4. Add VELVEETA; cook 5 min. or until melted, stirring frequently. Cool 10 min.
  5. Unoll pizza dough onto baking sheet sprayed with cooking spray.
  6. Press into 15×8-inch rectangle; top with meat mixture. Roll up, starting at one long side.
  7. Rearrange if necessary so roll is seam-side down.
  8. BAKE 20 to 25 min, or until golden brown.

Bacon-Tomatoes Mac and Cheese


Active Time: 20 minutes Total Time: 45 minutes Amount: 6 servings

INGREDIENTS:

  • 12 ounces elbow macaroni
  • ½ pound bacon, chopped
  • 3/4-pound melting Cheese Product, cubed
  • 1 cup milk
  • ¼ cup butter, divided
  • 1 cup seeded and chopped tomatoes
  • 1 cup Japanese-style Panko breadcrumbs
  • salt and pepper (to taste)

DIRECTIONS:

  1. Prepare pasta according to package directions, drain.
  2. Meanwhile, in medium skillet over medium-high heat, sauté bacon until crisp; remove to paper towels.
  3. Add cheese, milk and 2 tablespoons butter to cooked pasta: salt and pepper to taste.
  4. Cook over low heat, stirring frequently, until cheese is melted.
  5. Stir in bacon and tomatoes, transfer to a greased 2-quart baking dish.
  6. In small microwave-safe bowl, melt remaining 2 tablespoons butter.
  7. Add breadcrumbs and toss to coat. Sprinkle over macaroni.
  8. Bake in a preheated 375°F oven 20-25 minutes or until bubbly and golden brown.
