Easy Home-made candy canes

Things needed

1 1/2 cups semisweet or
white chocolate chips, 9 oz.
1 tsp. oil
36 pretzel rods
snowflakes sprinkles, sprinkles, crushed candy, and any other candy

DIP PRETZELS:

  1. Line baking sheets with wax paper. In microwave-safe bowl, combine chocolate chips and oil; microwave on High in 20-second intervals, stirring, until melted and smooth.
  2. Dip each pretzel halfway or three-quarter way into chocolate, spreading with small spatula or back of spoon and allowing excess to drip off.

    SPRINKLE COATING:

3. Immediately sprinkle pretzels with sprinkles, or candies. Place on baking sheets. Let dry, about 1 hour.

Easy Quick Microwave Pralines Treat

Things Needed

  • 1 stick margarine
  • 1 teaspoon vanilla
  • 1 1/2 cups sugar
  • 2 cups pecan pieces
  • 1/2 cup evaporated milk
  • Stirring Spoon
  • microwavable bowl

Steps

  1. Melt margarine in 8 cup microwavable bowl. Stir in evaporated milk and sugar.
  2. Microwave on high for 4 minutes. Remove and stir. Microwave on high another 4 minutes.
  3. Remove and stir again. Add pecans and cook for an additional 3 minutes. Add vanilla and stir until mixture begins to thicken. Drop on wax paper and let cool overnight. Enjoy!

My 12 -year-old daughter loves to help me cook and has a passion for making desserts. She’s the main one in our house who prepares the sweets and also assists me in posting the recipes here. These recipes are some of her favorites to make. While they’re great for older kids, younger kids can also try them with a bit of adult supervision.

Melting Chocolate Oatmeal coconut flakes bars

Ingredients:

  • 3 cups chocolate chips
  • 2/3 cup canned coconut milk
  • 1 cup Oats
  • 1 1/2 cup Raisins
  • 3/4 cup peanut butter cereal
  • 1/2 cup coconut flakes

Directions:

  1. In a double boiler melt chocolate chips over medium heat. When it starts to melt, pour in coconut milk.
  2. When all of it is almost melted put in a little at a time of oatmeal and raisins, mix well.
  3. When melted, put in the peanut butter cereal, mix in well.
  4. Grease an 8 by 8-inch pan and then pour the melted mixture into the pan.
  5. Sprinkle coconut flakes on top and then fold into the mixture.
  6. Place it in the refrigerator for about an hour, but if you can’t wait about 40 minutes.

Hush Puppies

This recipe was given to me by my Aunt Edna.

Ingredients:

  • 1 cup Self-rising flour
  • 2 cups corn meal
  • I jalapeno pepper – remove seeds
  • I med. Onion
  • 2 eggs
  • 1 can corn whole
  • 1 can cream style corn
  • Just enough water to mix

Directions:

  1. Mix all of the 1st 7 ingredients together.
  2. Add just enough water to get the mixture to hold together
  3. Heat a pot of cooking oil.
  4. Drop by balls into the oil.
  5. They will float and turn to a golden color when ready. See picture below.
Aunt Edna’ Hush Puppies

Banana cupcakes with butter cream frosting and sliced almonds

Easy to do good for children cooks

Ingredients for the cupcakes:

  • 1 cup flour
  • 1 Stick butter softened (I/2 cup butter)
  • 2 Bananas
  • 4 1/4 cup Sugar
  • 2 teaspoons vanilla
  • 4 Eggs
  • 1 Cup water

Directions for the cupcakes:

  1. Preheat oven to 350 degrees.
  2. Cream together sugar and butter.
  3. Add in the mashed banana than put it in a bowl with sugar and butter.
  4. Mix in flour, eggs, and vanilla.
  5. Pour into cupcake pan. Fill only about 3/4 of the way.
  6. Cook for 15 to 16 minutes or until golden on top and springs back when touched lightly.
  7. Put the cupcakes on a wire rack to cool, then turn it onto a plate to frost them.

FOR THE FROSTING

Ingredients:

  • 1 stick butter, softened teaspoons vanilla
  • 3 tablespoons milk
  • 2 cups Powdered Sugar
  • Almond slices (optional)

Directions:

  1. Measure all ingredients into the bowl.
  2. Beat the ingredients together with an electric mixer.
  3. Mix on high for 5 minutes until the frosting is thick and creamy.
  4. If frosting is too thick, add a little more milk; if it is too thin, add more powdered sugar.
  5. Sprinkle slices almonds on top if you want.

Quick & Easy Chicken Nachos Recipe

Prep Time: 10 min. / Total Time: 12 min.
Makes: Makes 6 servings, 1-1/2 cups each.

Directions:

  • 7 cups tortilla chips (about 6 oz.)
  • 1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes
  • 1/2 lb. boneless skinless chicken breasts, cooked, shredded
  • 1/2 cup Thick & Chunky Medium Salsa
  • 1 cup shredded lettuce
  • 1/3 cup sour cream
  • 1/4 cup sliced green onions

Directions:

  1. Arrange tortilla chips on microwaveable platter.
  2. Top evenly with VELVEETA.
  3. MICROWAVE on HIGH 2 min. or until VELVEETA is melted.
  4. TOP with remaining ingredients.

Quick and Easy Spinach Dip Recipe

Prep Time: 10 min./Makes: 32 servings, 2 Tbsp. each.

Directions:

  • 1 pkg. (10 oz.) frozen chopped spinach, thawed, drained
  • 1 lb. (16 oz.)cut into 1/2-inch cubes
  • 4 oz. (1/2 of 8-oz; pkg.) Cream cheese, cubed
  • 1 can (10 oz.)  Tomatoes & Green Chilies, undrained
  • 8 slices cooked Bacon, crumbled

Directions:

  1. Microwave ingredients in microwaveable bowls on HIGH 3 minutes
  2. Stir.
  3. Place back in microwave for about 2 more minutes or until mixture is
    well melted.
  4. Stir to ensure that mixture is well blended.

Quick Turkey and Cheese Sandwich Recipe

Prep Time: 5 min./ Total Time: 11 min.
Makes: Makes 4 servings.

Ingredients:

  • 8 slices bread
  • 4 slices of cheese
  • 8 slices Thin Sliced Oven Roasted Turkey Breast
  • 8 tsp. margarine, softened

Directions:

  1. Place a slice of cheese on each of 4 slices of bread.
  2. On top of the cheese place the turkey.
  3. Put the other slice of bread on top of that to make the sandwich.
  4. Spread the margarine or butter evenly over the outsides of the sandwiches.
  5. Cook in a skillet on medium heat for 3 min. on each side or until golden brown on both sides.

30-Minute Ground Beef Pizza Roll Recipe

Prep Time: 30 min. Total Time: 1 hour 5 min. (incl. cooling)/Makes: 6 servings.

What You Need

  • 1 lb. lean ground beef
  • 4 slices Bacon, cut into 1/2-inch pieces
  • 1 small onion, chopped
  • 1/2 lb. (8 oz.) Velveeta cut into 1/2-inch cubes
  • 1 pkg. (13.8 oz.) refrigerated pizza crust

Directions:

  1. HEAT oven to 400°F.
  2. Brown ground beef with bacon and onions in large skillet on medium-high heat; drain.
  3. Return meat mixture to skillet.
  4. Add VELVEETA; cook 5 min. or until melted, stirring frequently. Cool 10 min.
  5. Unoll pizza dough onto baking sheet sprayed with cooking spray.
  6. Press into 15×8-inch rectangle; top with meat mixture. Roll up, starting at one long side.
  7. Rearrange if necessary so roll is seam-side down.
  8. BAKE 20 to 25 min, or until golden brown.
