Easy Herbed Potatoes Recipe

HERBED POTATOES

Ingredients:

  • 3 or 4 medium potatoes
  • 1 small onion, thinly sliced
  • 2 tablespoons margarine or butter
  • 1 teaspoon dried parsley flakes
  • ½ teaspoon salt
  • ½ teaspoon dried dill weed
  • 1/4 teaspoon paprika

Directions:

  1. Make crosswise cuts 1/2 inch apart in each potato, not cutting all the way through. Place an onion
    slice in each cut. Place potatoes in 9-inch pie plate.
  2. Cover tightly and microwave on high (100%) until potatoes are almost tender, 4 1/2 to 5½ minutes. Microwave margarine uncovered in 1-cup glass measure on high (100%) until melted, 30 seconds to 1 minute.
  3. Stir in remaining ingredients, drizzle over potatoes. Cover and microwave on high (100%) until potatoes are tender, 4 to 5 minutes, 3 or 4 servings.

Easy Microwave Glazed Grapefruit

GLAZED GRAPEFRUIT

Ingredients:

  • 2 large grapefruit
  • 3 tbs sugar
  • 1 tsp cinnamon
  • 2 tsp butter or margarine
  • 4-5 tsp orange juice
  • mint leaves or cherries (optional)

Directions:

  1. Cut the grapefruit in half
  2. Place each half in a microwave safe bowl.
  3. Combine sugar and cinnamon in a small bowl.
  4. Sprinkle the cinnamon-sugar mixture over the grapefruit halves.
  5. Place a small dot of butter on each grapefruit half.
  6. Pour a tsp of orange juice over each grapefruit half.
  7. Microwave for 6 to 7 minutes on high, or until warm.
  8. Garnish with mint leaves or cherries.
    4 Servings
  9. Notes:
    • For 2 halves, microwave 3 to 4 minutes on HIGH.
    • For 1 half, microwave 2 to 2 1/2 minutes on High.

Easy Cheese Dip Recipe with Custom Add-Ins

This is a basic cheese dip recipe. You can choose from the optional add ins to make it how you want it.

Ingredients:

  • 1 pound melting cheese
  • Add ins (your choice)
    • 1 can (15 oz.) chili
    • 1/2 lb. ground beef, cooked; 1 can (10 oz.) Diced Tomatoes & Green Chilies, drained
    • 1 can (10 oz.) Diced Tomatoes & Green Chilies, undrained
    • 1 cup each Classic Ranch Dressing and sour cream


Directions:

  1. Cut cheese into 1/2-inch cubes; place in medium microwaveable bowl.
  2. Stir in your favorite add-ins.
  3. Microwave on HIGH 5 to 8 min. or until VELVEETA is melted and mixture is well blended, stirring every 3 min.
  4. Serve with your choice of chips or cut-up vegetables. Makes 24 servings.

Healthy 4-Serving Vegetable Recipe in 40 Minutes

Start to Finish: 40 minutes 

Makes 4 servings

Ingredients:

  • ½ cup chopped onion (1 medium)
  • 1 clove garlic, minced
  • 1 tablespoon olive oil or cooking oil
  • 3 cups cubed, peeled eggplant
  • 1 medium zucchini or yellow summer squash, halved lengthwise and cut into ¼-inch slices (1½ cups)
  • 1 cup chopped, peeled tomato (2 medium) or one 14.5-ounce can diced tomatoes, drained
  • ¼ cup chopped green sweet pepper (1 medium)
  • 3 tablespoons dry white wine, chicken broth, or vegetable broth
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon snipped fresh basil or oregano

Directions:

  1. In a large skillet cook onion and garlic in hot oil over medium heat until onion is tender.
  2. Stir in eggplant, zucchini, tomato, sweet pepper, wine, salt, and pepper. Bring to boiling; reduce heat.
  3. Simmer, covered, about 10 minutes or until vegetables are tender.
  4. Uncover and cook about 5 minutes more or until most of the liquid has evaporated, stirring occasionally.
  5. Season to taste with additional salt and black pepper.
  6. Stir in basil just before serving.

Mexican Deviled Eggs

Mexican Deviled Eggs

Ingredients:

  • 8 hard boiled eggs
  • ¼ cup mayonnaise
  • 1 tbs sliced green onion
  • Salt and pepper to taste
  • 1 tbs sour cream
  • ½ cup shredded cheese
  • 1/4 cup salsa

Directions:

  1. Slice eggs in half, lengthways.
  2. Remove yolks and set whites aside.
  3. In a small bowl mash yolks with cheese, mayonnaise, salsa, onion, sour cream, and salt.
  4. Evenly fill egg whites with yolk mixture.
  5. Serve

One-Pot Spaghetti with spiced chickpeas

Makes 4 servings | Hands-On Time: 30 minutes
Total Time: 30 minutes

What You Need

  • 3 Tbsp. olive oil, divided
  • 1 (15-oz.) can chickpeas, rinsed and drained
  • Seasonings: ½ tsp. each
    • paprika
    • cumin
    • coriander
    • cinnamon
  • salt and black pepper to taste
  • 1 tsp. garlic powder
  • 1 medium onion, chopped
  • 2 cups vegetable broth
  • 1 (28-oz.) can crushed tomatoes
  • 1/2 (16-oz.) pkg.  Spaghetti
  • 1 (8-oz.) pkg. fresh mozzarella pearls or mozzarella
  • (cubed), if desired

What You Do

  1. Heat 2 Tbsp. oil in Dutch oven on MEDIUM-HIGH heat.
  2. Add chickpeas and seasonings.
  3. Cook and stir until chickpeas are golden, about 5 minutes. Remove from pan and set aside.
  4. Reduce heat to MEDIUM.
  5. Add 1 Tbsp. oil and onion to pan; sauté 2 to 3 minutes.
  6. Add broth, tomatoes, and garlic powder. Heat to boiling.
  7. Add spaghetti, breaking to fit if necessary.
  8. Reduce heat and cover partway; simmer 10 to 12 minutes or until pasta is just tender and sauce is thickened, stirring frequently.
  9. Remove from heat.
  10. Stir in chickpeas and cheese. Sauce will thicken as it stands.

Easy Broccoli Basil Pasta Recipe

YOU WILL NEED:

  • 1/2 head broccoli florets, stems removed
  • 2 garlic cloves, thinly sliced
  • 1 1/4 cups coarsely chopped fresh basil leaves
  • 1/3 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • Pinch salt
  • Cooked pasta


DIRECTIONS:

  1. Fill a large bowl with ice water.
  2. Bring a large pot of water to boil.
  3. Add the broccoli and garlic and boil until just tender, about 10 minutes.
  4. Drain the broccoli and garlic and transfer to the bowl of ice water to stop the cooking; let it sit until completely cooled, about 5 minutes.
  5. Drain the broccoli and garlic well, and transfer to a food processor along with the basil, olive oil, cheese, and salt.
  6. Process until smooth and serve over pasta.

Easy Homemade Doughnuts Recipe

Ingredients:

  • 1½ cups flour
  • 1/4 tsp salt
  • 1½ tsp baking powder
  • 1 egg
  • 1/3 cup sugar
  • 2 tbsp milk
  • 2 tbsp shortening
  • 1 tsp vanilla

Directions:

  1. Cream shortening, sugar, and egg together.
  2. Add vanilla and salt and stir this into flour and baking powder (sifted together).
  3. Add milk, if necessary to make dough.
  4. Roll out 1/4 inch thick, cut and fry in deep oil and drain.
  5. Dust with powdered sugar.

Quick and Easy Stuffed Fish Recipe

Stuffed fish is a fast tasty meal. We like to have this on Friday nights.

Ingredients:

  • Stuffing (Prepared) I have linked to a great stuffing recipe.
  • 2 pounds plain, raw fish fillets
  • 2 Tablespoons Lemon Juice (it is possible replace the lemon juice, black pepper, margarine or butter and salt with lemon pepper seasoning)
  • 1/4 cup margarine or butter
  • 1/4 black pepper
  • Salt (to taste)


Directions:

  1. Preheat the oven to 350 degrees.
  2. Rinse fish under cold running water. Pat dry with paper towels.
  3. Spray baking dish with no-stick cooking spray. Put half the fish in the dish.
  4. Spoon the stuffing over the fish. Place the remaining fish fillets over the stuffing.
  5. Melt remaining 1/4 cup margarine. Stir in lemon juice and pepper. Spoon over the top layer of fish. (Or if you are using the lemon pepper seasoning use it.)
  6. Cover with aluminum foil and bake 30 minutes or until the fish pulls apart easily in layers.
